Salted Caramel Stuffed Chocolate Chip Cookie Bars
Two layers of chocolate chip cookie dough with a thick layer of salted caramel sealed between them, baked in a 9x13 pan until deep golden.
Ingredients
- Cookie dough:
- 1 cup (226 g) unsalted butter, softened
- 1 cup (200 g) packed brown sugar
- 1/2 cup (100 g) granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 3 cups (375 g) all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 2 cups (340 g) chocolate chips
- Salted caramel:
- 11 oz (310 g) soft caramel candies, unwrapped
- 2 tbsp heavy cream
- 1 tsp flaky sea salt
Method
- Heat the oven to 350°F and line a 9x13-inch pan with a parchment sling.
- Beat the butter and both sugars until fluffy, then the eggs and vanilla. Mix in the flour, baking soda and salt, then the chocolate chips.
- Press half the dough evenly into the pan.
- Melt the caramels with the cream over low heat, stirring until smooth. Cool 5 minutes, then pour over the dough, leaving a 1/2-inch border. Sprinkle with flaky salt.
- Flatten the rest of the dough into patches and lay them over the caramel, pressing gently to seal.
- Bake 30-35 minutes, until the top is deep golden brown and set all the way across.
- Cool at least 1 hour before cutting. The caramel is very hot straight out of the oven.
