Frosted Triple-Chocolate Brownie Crunch Bites
A fudgy dark chocolate brownie loaded with milk and white chocolate chunks, baked until the top crackles, then frosted and topped with chopped dark chocolate.
Ingredients
- Brownies:
- 1/2 cup (113 g) unsalted butter
- 4 oz (115 g) dark chocolate, chopped
- 1 cup (200 g) granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup (65 g) all-purpose flour
- 1/4 cup (20 g) unsweetened cocoa powder
- 1/4 tsp salt
- 1/2 cup (85 g) milk chocolate chunks
- 1/2 cup (85 g) white chocolate chunks
- Frosting and topping:
- 1/4 cup (56 g) unsalted butter, softened
- 1 cup (120 g) powdered sugar
- 3 tbsp unsweetened cocoa powder
- 1-2 tbsp milk
- 1/2 tsp vanilla extract
- 2 oz (55 g) dark chocolate, finely chopped
Method
- Heat the oven to 350°F and line an 8x8-inch pan with parchment.
- Melt the butter and dark chocolate together, then whisk in the sugar.
- Add the eggs and vanilla and whisk hard for a full minute, until glossy. This is what gives you the shiny, crackly top.
- Fold in the flour, cocoa and salt, then the milk and white chocolate chunks. Spread into the pan.
- Bake 25-28 minutes, until the edges are set and the top is shiny and crackled. A toothpick in the center should come out with moist crumbs.
- Cool completely in the pan, about 2 hours.
- Beat the frosting ingredients until smooth. Cut into 16 squares, frost each one, and top with chopped dark chocolate.
