Caramel Apple Cheesecake Bites
No-bake cheesecake bites on a buttery graham crust, topped with cinnamon-spiced apples, chilled firm and finished with warm caramel.
Ingredients
- Crust:
- 1 1/2 cups (150 g) graham cracker crumbs
- 6 tbsp (85 g) melted butter
- 2 tbsp granulated sugar
- Cheesecake filling:
- 8 oz (225 g) cream cheese, softened
- 1/3 cup (40 g) powdered sugar
- 1 tsp vanilla extract
- 3/4 cup (180 ml) cold heavy cream
- Cinnamon apples:
- 2 medium apples, peeled and finely diced
- 1 tbsp butter
- 2 tbsp packed brown sugar
- 1/2 tsp ground cinnamon
- To finish:
- 1/4 cup caramel sauce, warmed
Method
- Line a 12-cup muffin tin with paper liners. Stir the graham crumbs, melted butter and sugar together and press a heaping tablespoon firmly into the bottom of each liner.
- Cook the diced apples with the butter, brown sugar and cinnamon over medium heat 5-6 minutes until tender. Let them cool until just warm.
- Beat the cream cheese, powdered sugar and vanilla until smooth. In another bowl whip the cream to stiff peaks, then fold it into the cream cheese.
- Pipe or spoon the filling into the liners and top each one with the cinnamon apples.
- Chill 2-3 hours, until every layer is completely firm.
- Right before serving, drizzle each bite with warm caramel.
They keep 3 days covered in the fridge. Add the caramel right before serving.
